The PS3 I have ordered from Amazon says DOES NOT INCLUDED HDMI cable.
I've just noticed this now.
Is this a necessity to even play your PS3 or is it something to do with better pic quality if your connecting your PS3 to a HDTV?

it's not needed to use the ps3 but you can get a HD signal through Commponent and HDMI cables if you want to up the picture quality on a HD TV, you get standard def through any other conection.

you get a composite AV lead with the ps3 because everyone can use it with the three phono plugs or a scart adapter, most people don't have a HD tv so to give a HDMI cable with it would alienate most people, that and they probably save a couple of quid

EDIT: if you don't have a HD TV and currently use S-Video or RGB Scart for your PS1/2 you can use those

EDIT: Im getting mine from play.com with three games and free HDMI cable, they still have orders left
