Grandia 3. If you like Lunar, this series is the spiritual successor to it. The battle system is astounding in its depth. Skip Grandia Xtreme though, it's extremely repetitive and gets dull. Grandia 2 is good too, but the Dreamcast version is superior to the PS2 one.
Wild Arms 4. I almost skipped this one due to how awful WA3 was, but WA4 is by far my favorite in the entire series. The Hex system really revitalizes the game. WA5 is decent, but not quite as good.
Rogue Galaxy. It's on the long side, but is quite a bit of fun.
Suikoden 3 & 5. 4 was rightfully panned, but the other two PS2 incarnations are solid. Suikoden 3's storyline is excellent and multifaceted. I've only gone a small way into S5's storyline, but I enjoy it so far.
As for FF10, I thought it took 2 years before it was released in the US. I'm kind of expecting the RPGs to really pick up mid 2008. I can't wait to see what NIS-A, Atlus, and Xseed bring over next year.

That's a good list there. I always wanted to play Rogue Galaxy but never got around to it, and I must admit I liked Wild ARMs 5 more than WA4. As for Suikoden III and V, they're two of my favorite RPGs of the last generation.
But I also have to add a few more: Shadow Hearts Covenant, which was easily in my top RPG list, along with Dragon Quest VIII, Xenosaga, Valkyrie Profile 2, and Disgaea: Eternal Darkness. But some underrated and under-appreciated RPGs are: Legaia 2: Duel Saga and Atelier Iris: Eternal Mana.
Oh, and Lunar: SSSC is one of my favorite games ever. Lunar 2: Eternal Blue was great, too.
