Let me toss out a few PS2 RPGs that you might have missed here if you've played all the ones listed.

Grandia 3. If you like Lunar, this series is the spiritual successor to it. The battle system is astounding in its depth. Skip Grandia Xtreme though, it's extremely repetitive and gets dull. Grandia 2 is good too, but the Dreamcast version is superior to the PS2 one.

Wild Arms 4. I almost skipped this one due to how awful WA3 was, but WA4 is by far my favorite in the entire series. The Hex system really revitalizes the game. WA5 is decent, but not quite as good.

Rogue Galaxy. It's on the long side, but is quite a bit of fun.

Suikoden 3 & 5. 4 was rightfully panned, but the other two PS2 incarnations are solid. Suikoden 3's storyline is excellent and multifaceted. I've only gone a small way into S5's storyline, but I enjoy it so far.

As for FF10, I thought it took 2 years before it was released in the US. I'm kind of expecting the RPGs to really pick up mid 2008. I can't wait to see what NIS-A, Atlus, and Xseed bring over next year.
